Accessories for the Marcato Atlas 150 include 13 cutter rollers for making a wide range of fresh homemade pasta shapes: capellini, lasagnette, linguine, mafaldine, pappardelle, ravioli, raviolini, reginette, spaghetti, spaghetti chitarra, trenette, bigoli and vermicelli. Designed for use with the Atlas 150 pasta machine, the set combines chrome-plated steel components and anodised aluminium alloy rollers to avoid metal transfer to the dough and ensure safe food contact. Several cutters can be attached to the Atlas 150 and used with the Pastadrive motor to speed up production; note that the motor cannot be applied for mafaldine, pappardelle and reginette shapes for safety reasons.

How to use

Attach the selected roller to the Marcato Atlas 150 according to the machine’s instructions. Feed the sheet of rolled pasta dough through the chosen cutter to form the desired shape. When motorised operation is needed, fit the Pastadrive motor only for the shapes indicated as compatible; do not apply the motor for mafaldine, pappardelle or reginette rollers. After use, remove any dough residues from the rollers using a small brush or a toothpick.

Recommendations

Do not clean these accessories in the dishwasher and avoid metal scrubbers. Clean with a toothpick or small brush to remove dough particles and store dry to preserve the anodised surfaces and chrome-plated parts.
